Minimalist hangout meets cocktail flavour lab
Despite its minimalist, subtly industrial interior, Alma Prague, from the team behind the popular local hospitality group Kro Kitchen, brims with history. For more than 600 years this city centre site spanning three buildings has, in turns, served multiple purposes, including an arthouse cinema and horse stables. Alma, with its deft fusion of elements like an old, vaulted ceiling and contemporary bespoke light boxes, adds another dimension to the fascinating story. During the day, guests hole up in the sunny, earth-toned café with espresso tonics and rhubarb galettes. By evening, the energy shifts to the breezy courtyard wine bar for bottles of offbeat Moravian whites, or dinner in the restaurant heightened by the centrepiece bar.
Here, dishes like slow-roasted lamb shoulder accompanied by toasted nettle stuffing and garlicky spinach velouté are prefaced with cocktails hatched in the onsite laboratory by an enthusiastic bar team experimenting with things like spruce needles and ricotta. The drinks menu reinforces Alma's predilection for seasonal Czech ingredients and celebrates both unconventional techniques and tried-and-true preservation practices. Consider the daiquiri with lacto-fermented cherry and pickled mirabelle plum, the fizzy Teeling – a single malt Irish whiskey highball pairing peach and black quince – or the No Espresso Martini, a digestif incorporating Johnnie Walker Black Label whisky, fino sherry, blackberry, bay leaf, ghee and cold brew. Zero-proof libations are just as alluring, with Sichuan pepper and star anise enlivening tangy citrus kombucha.
