Denmark distilled via good drinks and good beats

Often described as "a vinyl bar that happens to serve cocktails", this achingly cool cocktail enclave is the haunt of well-shod Danes and in-the-know city visitors looking for highballs with a high-fidelity soundtrack. Everything here feels distinctly Danish by design, from the stripped-back, washed wood table tops and the arching windows lit by the pale Copenhagen sun, to the white walls bisected by cubed shelves heaving with vinyl records.

Jazz is the heartbeat here, although anything 70s-inspired might find its way onto the decks, which are managed by the bartenders on shift. Much like the design, drinks here take the minimal route: clean, crisp, notably avoiding citrus and added sugar and frequently pre-batched to eschew any live bartending theatrics for the serve. The Danish influence is evident in the ingredients dotted throughout the menu – the sea buckthorn-infused vermouth that makes up the Buckthorn Margarita, for example – and what can be sourced locally, is.

Despite the slightly sparse surrounds, there's nothing minimalist about the hospitality at Bird, which is warm, precise and consistent, and probably the reason it attracts a diverse crowd from hip twenty-somethings to a designer-clad older crowd that appreciates good drinks and good vibes. Bird opened a few offshoots from its original and awarded Gammel Kongevej location (it takes home The Best Bar in Denmark 2026 award as part of the inaugural edition of Europe's 50 Best Bars) in Frederiksberg and downtown in Indre By, but no matter which spot you hit, it's bound to be buzzing, so early arrivals are recommended.
