Perched like a crimson beacon in the heart of Sergels Torg square, Röda Huset – translated as 'red house' – is an unapologetic tribute to the Swedish larder. While many bars look to the tropics and traditional cocktail capitals for inspiration, Röda Huset finds its identity and output in the forests, farms and orchards surrounding Stockholm. The aesthetic is quintessentially Scandinavian: clean lines, expansive windows and a minimalist warmth that shifts effortlessly from a sun-drenched afternoon spot to a sleek evening destination.
The drinks programme is a masterclass in hyper-locality. Head bartender Hanna Oscarsson and team are known for their obsessive dedication to seasonality, often spending months preserving Swedish produce at its peak to use throughout the year. Approaching everything with a farm-to-glass approach, its cocktails avoid commonly imported ingredients like citrus and tropical-farmed sugars in favour of local ingredients, be it apples, plums or cold-pressed carrots. The resulting drinks are deceptively simple in appearance, often entirely clear and served in elegant, stemless glassware without garnishes. But don't mistake the unassuming looks for a lack of flavour. Using advanced techniques like clarification and vacuum distillation, the bar team coaxes out the purest essence of green apples or even pine shoots. Its signature serve, the Kolagräs with Good Cream, has earned a cult-like following thanks to its remarkable, clarified combination of cream from select Jylland cows, vodka, vernal grass, herbal liqueur and green apples from Kattvik Orchards in southern Sweden.
