Futuristic sips through a sustainable lens

While the Lyan family of bars is synonymous with London's cocktail revolution, Super Lyan finds its home in a circular, neon-lit corner of Amsterdam's Kimpton De Witt Hotel. Super Lyan acts as Ryan 'Mr Lyan' Chetiyawardana's take on a futuristic diner, remedying tired speakeasy tropes with a dose of 1950s-inspired playfulness and a bold colour palette. The aesthetic is loud: think turquoise leather, chrome accents and glowing geometric shapes. Service manages to be both lightning-fast and genuinely warm, catering to the crowd that ranges from industry professionals to locals looking for a late-night haunt. It is a space that proves 'serious' cocktails don't require a serious atmosphere

The drinks programme is what one would expect of a Lyan bar: reimagined classics through a sustainable lens, oftentimes constructed with downright wacky techniques. Its latest menu, Boroughs of Amsterdam, translates the many neighbourhoods that make up the city into a selection of intriguing concoctions. Take its Three Sisters Hi-Ball, for example, inspired by the Westpoort dock district, where the traditional 'three sisters' crop (squash, corn, beans) is blended, clarified with beer-making techniques and combined with bourbon and squash soda for a super refreshing sip. These sit alongside a selection of 'Lyan All Stars', including its espresso martini, that doesn't actually contain a single drop of coffee, but rather a house-made kvass syrup of rye bread and IPA malt extract that delivers on the richness and earthy flavours in its place.
