Opened in 2021 and crowned The World's Best Bar in 2023, sponsored by Perrier, Sips swiftly established itself as one of the most forward-thinking cocktail destinations. At the helm are two industry heavyweights: Simone Caporale – who led Artesian bar when it was named No.1 for four consecutive years at The World's 50 Best Bars – and luminary Marc Álvarez, who spent a decade working with the Adrià brothers of El Bulli fame.

The bar itself defies convention. In Sips Drinkery House, the room is anchored by an island bar that dissolves the boundary between guest and bartender. Drinks arrive as immersive, multisensory moments rather than mere serves – playful, precise and always visually striking. Reimagined classics like the Scotch whisky-based Espresso Martini that's finished with a fluffy coffee foam epitomise the bar's creative approach, while signatures like the Krypta, served in a terrarium-style vessel designed to amplify aroma, brings the theatrics.

Beyond the Drinkery House is Esencia, a 14-seat space within the venue where guests can experience a curated tasting journey of the bar's 'sips,' or tiny cocktails. It's intimate, experimental, and inspiring – an experience that cements Sips as a benchmark for where contemporary cocktailing is headed.
