What begins as a discreet entrance on a quiet street in central Oslo quickly opens into a multi-level universe of drinking experiences: a high-volume draft cocktail bar upstairs, an outdoor courtyard pouring local beers and ciders and the pioneering distillery bar.
The latter is the bar's crown jewel, housed in the heart of Himkok (Norwegian for moonshine) on the street level. The intimate, low-lit space – defined by dark leather, warm wood, and mirrored accents – frames the in-house micro-distillery, where the bar produces house-made aquavit, gin, and vodka that feed directly into the cocktail programme.
Recent years have seen Himkok's menus take a multidisciplinary approach, developing concept-led menus in collaboration with Norwegian creatives spanning music, fashion and design. The latest menu Designed by Sipping delves into the world of design in partnership with Oslo-based design Studio Sløyd. It features 13 cocktails, each reimagined as a unique design, ranging from small, functional items and interior objects to more sculptural or conceptual works. The Fika, which captures the spirit of Scandinavia's beloved coffee break, blends espresso liqueur, whiskey, alcohol-free cider and a touch of Scotch whisky is accompanied by a handcrafted cafetière, which balances functionality with thoughtful design.
Having been around for over a decade, the bar also has compiled its own list of can't miss house classics. The earthy, mezcal-based Beetroot Martini is worth a punt for the adventurous imbiber, but the Birch is requisite. Himkok Old Tom gin, meadowsweet, birch sap and an award-winning blue cheese olive make for a dry martini that's worth a trip to Oslo in its own right.
