Few bars are spoken about with the hushed reverence that this London hotspot is. Founded by spirit savants Monica Berg and Alex Kratena, despite the bar being open for more than seven years, this hallowed ground for cocktail mastery still feels cutting edge. Maybe it's the exposed, industrial-chic aesthetic that feels welcoming and warm in the front, Elementary, and mystical in the moody gloom of Tayēr, at the back.

Perhaps it's the fact that the bar has built the blueprint for aggressively innovative drinks coped and replicated across the world, from the meticulously designed honeycomb well system behind Tayēr's bar to the signature One Sip Martini (complete with a blue cheese olive) that comes out of it. A thoughtful and forward-looking approach pervades every element here, from sourcing – Berg removed palo santo wood from a cocktail due to its scarcity and significance – to sustainability and the future of the drink.

Come in the day to lounge in the light-filled expanse of Elementary and indulge in house-brewed kombucha, beer and a rotating calendar of seasonal cocktails such as a Frozen Midori Matcha Margarita as well as substantial bar food such as a killer tiramisu cheesecake.
