René Redzepi protégé Jose Luis Hinostroza helms the restaurant and the kitchen. Emphasising open-fire cooking and the region’s unique fruits and vegetables, he creates masterpieces of bold flavours. The bar maintains Hinostroza’s high standards, with a cocktail menu that makes the most of the bar’s lush habitat. In 2025, the team announced the elimination of any separation between kitchen and bar, bending the culinary worlds of food and drink seamlessly to create a shared playground of experimentation, local flavours and bold serving styles. Expect sultry, tropical vibes in cocktails like the Melipona: whiskey, Xtabentún, sour orange from Yucatán, ginger and smoked Melipona honey. A true oasis deep in Tulum’s jungle.
