Vijay Mudaliar on Native's Singaporean identity and creating cocktails with ants at #50BestTalks

Singapore's top bartender spoke at #50BestTalks in Macao.

It might seem an unusual concept to forage for wild ingredients in a sprawling capital city, but that is exactly what bartender Vijay Mudaliar did in his hometown of Singapore. He embarked on a solo mission to discover what ingredients he could find in and around the city and ended up turning urban foraging into a bar called Native. 

Now just over a year old, Native bar is No.47 in The World's 50 Best Bars and No.20 in Asia's 50 Best Bars 2017, with the 2018 list to be revealed tomorrow, Thursday 3rd May, in Singapore. Mudaliar has consistently impressed locals and foreigners with his creative cocktails and showcase of local ingredients and locally made decor in Asia's most exciting city for bars.

Mudaliar spoke about his cocktail philosophy, Singaporean identity and the most unusual ingredients he has managed to incorporate into a cocktail at the #50BestTalks event, presented by Miele, at Wynn Macau as part of Asia's 50 Best Restaurants 2018
