It’s all about fire at this sultry Brisbane restaurant. On entering the matte black, warehouse dining space, every eye gravitates towards three glowing woodfire pits. Chef and co-owner Ben Williamson has shunned electricity and gas in his open kitchen, favouring the sizzling, smoky medium of flame. A seasonally changing menu takes cooking back to basics, with Williamson mastering different fuels – ironbark, apple wood, cherry wood and olive wood – to ignite unique flavours in everyday ingredients: a humble cucumber, charred and bedded on fresh ricotta; grilled calamari served with fermented strawberries in a light dashi broth; and a ribeye sliced and served over sweet-braised garlic, with smoked mustard. The 20-seat bar, adjacent to the dining space, reserves space for walk-ins to drink and dine. The drinks are similarly flame-kissed: order a Flower Child, made with gin, peach aperitif, a little lemon and scorched grape. Hot stuff.
