Amaru (an amalgamation of words loosely translating to 'a beautiful place to love') delivers on its name with a soothing palette of tan and grey, textural raw plaster walls and an aged wood floor counterbalanced by delicate hand-crafted ceramics and elegant lighting. Detail is everything here. Clinton McIver – formerly of Vue de Monde – creates complex, contemporary tasting menus bound together by interesting textures, in addition to geography and genre. The Sensory Menu is the main event, while the Insight Menu is a more concise version that's lunch-only. Sweet and savoury blend effortlessly across both, with Australia's native ingredients first and foremost. Two-month aged venison licked by the grill is served alongside velvety hazelnut praline, wagyu comes with a macadamia miso, while salted goat curd and blood plum provides an interesting segue into the desserts. Best seats in the house? The chef's counter, of course.
