Clinton McIver – formerly of Vue de Monde – creates complex, contemporary tasting menus bound together by interesting textures rather than geography or genre. Sweet and savoury blend effortlessly. Two-month aged venison licked by the grill is served alongside velvety hazelnut praline, while salted goat curd with blood plum provides an interesting segue into the deserts.
