Seasonal Brazilian fine dining is at the heart of Tuju, where chef Ivan Ralston applies haute-cuisine knowhow (picked up at world-renowned restaurants Maní, Nihonryori RyuGin, El Celler de Can Roca and Mugaritz) to local produce. A regular on Latin America’s 50 Best list, Tuju’s industrial-chic interior is a lovely contrast to the restaurant’s three vegetable gardens, hinting at its experimental approach. Both the six-course ‘Market’ and 13-course ‘Season’ tasting menus offer additional vegetarian options, with Ralston delving into Brazil’s pantry to create pupunha palm tree ravioli stuffed with green broad beans, sheep cheese and dill, and tomato salad with a seaweed tapenade, passion fruit and koji.
