Madê has been thriving as one of the best restaurants in the Brazilian city of Santos for a while now. When the restaurant opened in 2017, chef-owner Dário Costa slowly started to win over residents of Baixada Santista in this coastal part of the São Paulo region, but also lured in-the-know Brazilians and travellers from afar. Costa’s food – grilled fish and seafood – very quickly became admired, reflecting teh chef's collaboration with small-scale producers and farmers. Unconventional fish or lesser-known varieties are put in the spotlight, contributing to the overall use of organic, sustainable ingredients. In a twist on the Venetian baccalà mantecato, Madê has created its own version with homemade salt cod, served on manioca fried polenta with onion chutney and northeast caviar. Similarly, there’s a Brazillian-British crossover in the Wellington, made with puff pastry and seared fish, wrapped in mushroom duxelles, kale leaves, Brazilian palm heart pureé and Catuaba sauce.
