Madê has been thriving as one of the best restaurants in the Brazilian city of Santos for a while now. When the restaurant opened in 2017, Dário Costa slowly started to win over residents of Baixada Santista in this coastal part of the São Paulo region, but also lured in-the-know Brazilians and travellers from afar. Costa’s food – grilled fish and seafood – very quickly became admired, reflecting teh chef's collaboration with small-scale producers and farmers. Unconventional fish or lesser-known varieties are put in the spotlight, contributing to the overall use of organic, sustainable ingredients. In a twist on the Venetian baccalà mantecato, Madê has created its own version with homemade salt cod, served on manioca fried polenta with onion chutney and northeast caviar. Similarly, there’s a Brazillian-British crossover in the Wellington, made with puff pastry and seared fish, wrapped in mushroom duxelles, kale leaves, Brazilian palm heart pureé and Catuaba sauce.
