São Paulo’s Exímia offers a taste of Brazil in cocktail form, created by award-winning bartender Márcio Silva. This venue – named after a Latin word meaning the constant search for perfection – is a celebration of the country’s rich history, and its unique culinary traditions and flavours, without any of the tired tropes that might be associated with it. Diversity is at the core of this philosophy here, and behind Silva’s approach, which encompasses anthropology, history and an exploration of native Brazilian ingredients. Expect an immersive journey through the flavours of Brazil via the cocktail list, with ingredients including amburana, cambuci and more. Chef Manu Buffara has drawn on Silva’s cocktails for inspiration when creating the menu here, with a variety of plates as well as a trio of sandwiches to choose from.
