Japanese food in Brazil is hardly a new concept – after all, São Paolo is home to the largest Japanese expat community in the world – but still, Ryo Gastronomia stands out with its traditional take on kaiseki cuisine. Just 18 diners per session, perched either at the chef’s counter or at a handful of tables in a serene space kitted out with kanji prints, rock garden, decorative potted plants and slatted wood windows, are able to experience multi-course theatre driven by the seasons. The restaurant is led by chef Edson Yamashita, who studied Edomae sushi at Kawasaki’s Sushi Kan and translates a meticulous approach to preparation and service. He uses his depth of experience to fine effect, plating nigiri, wagashi sweets and other delicate courses onto bespoke-designed dishware and ceramics, some so beautiful you’ll wish you could take them home.
