The saying goes that there's a reason you don't get diamonds the size of bricks and Michelin-starred Kan Suke is most definitely a diamond. It stands to reason that in a city of 1.5 million Japanese expats there will be a high proliferation of exceptional Japanese restaurants and chef Keisuke Egashira's establishment is one of the best, serving the freshest sushi and sashimi to just eight counter diners (there are additional seats upstairs but, as ever, those overlooking the kitchen are the best in the house). There are set lunch and dinner menus alongside the omakase, with the options to choose either an entirely cold version or to add a few hot dishes into the mix as well. Be warned though, reservations are essential and famously tricky to secure, but it's most definitely worth persevering.
