One of the leading lights of new Cambodian cuisine, Sothea Seng is an ambitious 30-something who already had a string of restaurants to his name when he opened Lum Orng in 2019. This stilted, wooden space takes his concept of modernising Cambodian classics while celebrating their heritage to the next level. The first farm-to-table restaurant in the country, it is the logical next step for a chef who spent his childhood on a vegetable farm in Kampong Cham. Seng began cooking for his brothers and sisters at the age of 10 with whatever vegetables his parents could spare and this creativity can be felt in a choice of three seven-course tasting menus (including one vegan option) that change seasonally and are designed to be shared. Most interesting is the Royal Khmer option. Plates like poached Takeo lobster and swallow’s nest preserved in sugar explore fusion flavours from the former Khmer empire which extended into southern Vietnam and the Mekong Delta, southern Laos and Thailand.
