One of the leading lights of new Cambodian cuisine, Sothea Seng is a young, ambitious chef who already had a string of restaurants to his name when he opened Lum Orng in 2019. This stilted wooden space takes his concept of modernising Cambodian classics to the next level. The first farm‑to‑table restaurant in the country, it is a logical next step for a chef who spent his childhood on a vegetable farm in Kampong Cham. Seng began cooking for his brothers and sisters at the age of 10 with whatever vegetables his parents could spare, and this creativity can be felt in a kaleidoscopic, seasonally changing tasting menu, rooted in sustainability. Lum Orng is defining what many call New Mekong cuisine by exploring the fusion flavours of the former Khmer Empire, which extended into southern Vietnam and the Mekong Delta, southern Laos and Thailand.
