Sushi Nishinokaze

Montreal, Canada

The East meets West cliché is wildly overused, but sometimes it really does nail things on the head – such as in the case of Sushi Nihinokaze, an intimate eight-seater omakase from Canada, and Japan-trained chef Vincent Gee. Nishinokaze translates as ‘west wind’ and this spot on Montreal’s restaurant-lined Saint-Laurent Boulevard combines aesthetics from North America and Asia – the bleached wood counter and noren curtains at the entrance – with seafood and rice from around the globe. Design of the eight-seater interior comes courtesy of a Canadian-Japanese partnership between Justin Nguyen and Taichi Kuma (son of Kengo Kuma), while a rotating collection of ancient pottery provides a stunning backdrop to fusion dishes washed down with rare sakes or Burgundian wines. A visual feast as much as a visceral one.
