With dishes that arrive looking like little colour-pop paintings, smart contemporary decor and delightful staff, it's easy to be a little sweet on Melba, a 36-seat restaurant in the Saint-Sauveur neighbourhood. It’s a little unusual to talk about desserts before starters, but since we mentioned sweetness, it’s worth pointing out that puddings are a real highlight here. Île flottante comes with sea buckthorn, fennel pollen and buckthorn granita; a dark chocolate tart is zhuzhed up with black-tea cremeaux and tonka bean ice-cream. Savoury items are just as winsome also: Barbajuan fritters come with shrimp, XO sauce, bisque emulsion and guanciale; scallops are paired with cucumber, jalapeno, crème fraîche and preserved lemon. The menu is a love letter to French bistro cuisine, with some thoughtful and interesting updates, and a fitting emphasis on Quebec ingredients.
