Beneath the 17th-century stone vaults of Old Quebec lies a mysterious culinary theatre where no two nights are the same. Across 12-18 courses, the menu (secret to guests until arrival) is choreographed into three-acts spent in three different spaces. Bookings are essential, as guests need a personalised code sent via text to enter through the locked door. From there, start the night at the bar area for snacks, then float over to the chefs counter for mains, and close the night in a forest-themed vault for dessert. Signature dishes include silky Quebec scallops crowned with wild caviar, seaweed-fed Gaspé lamb with molasses and black apple, and a whimsical frozen sunchoke 'truffle' shaved tableside. If it's not made in Canada, you won't find it on the menu – and yes, that means there's no olive oil. The wine list, on the other hand, extends as far as South Africa.
