Dining here feels like a meandering stroll through chef Justin Cournoyer’s wildly inventive mind. Actinolite is the name of the town where he grew up and where he discovered foraging. The passionate chef personally explains the concept behind each dish tableside and even lives above the restaurant. Tasting menus reflect the strong relationships forged with Canadian suppliers and a deep respect for the seasons. Crucial to Chef Cournoyer is eating the landscape – freshly picked or foraged produce that gets served up moments later on the plate. Carrots smoked and magnolia glazed, dried and cooked in seabuckthorn, house-cured pancetta, toasted Ontario hazelnuts and preserved sunflower make a dish of exceptional quality. Other delights from an ever-changing roster include mussels, fermented apple juice and juniper butter, beef and rutabaga with smoked mussel, swordfish with sumac, marigold and tomatillo.
