St Lawrence

The name might reference the mighty river that flows through Quebec but French cuisine from the old country rather than modern Canadian food is the order of the day at St Lawrence. Chicken ballotine stuffed with veal sweetbreads with foie gras on brioche and truffle cream sauce tells you everything you need to know, but there’s masterful pastry work too, whether the pâté en croûte or a sort of cod Wellington entombed in a fish-shaped sarcophagus. St Lawrence is all the more surprising to find in downtown Vancouver given that chef-owner Jean-Christophe Poirier made his name with Italian cooking, though clearly the French-accented dishes of his Quebecois childhood never left him, nor a love of knickknacks with which the homely dining room is decorated. An entirely French wine list is reflected in a Cognac-heavy cocktail list.
