History seeps through the walls at L'Abattoir in Vancouver, a striking restaurant and bar housed in a revamped 19th-century brick building that flanks Blood Alley, the city's former meatpacking and butchery district (hence the name). Marked by exposed brick, bold geometric tile floors and a sleek wooden bar, the Gastown gem was also formerly Vancouver's first jail. As a small 8-seat restaurant bar, the cocktail programme punches above its weight with housemade tinctures and unconventional ingredients like avocado pit and oat orgeat, plus a section of 'reserve' cocktails that feature special interpretations of classics, made with vintage, rare and premium spirits. Key in on the house vintages - that is, longstanding favorites invented by former staff members - like the Avocado Gimlet or Gastown Swizzle, for a taste of what has made the bar so beloved by the city since it opened in 2010. Its food menu champions the best of the west, offering the best produce of the day in dishes in its nine-course tasting menu. Alternatively, lauded plates like its baked Pacific oysters with black truffle and garlic butter have become mainstays of the menu and are available a la carte.
