This Wangfujing bar doesn’t try to win you over with bells and whistles but rather precision, dedication and quality. Ingredients are king here, often Chinese and frequently sourced directly from farmers for a local, seasonal touch – expect unusual additions such as bitter gourd, ginger torch flower, hairy fig root and osmanthus. Given a modern mixology treatment, they push flavour boundaries and provide eye-opening combinations that you won’t find at any old run-of-the-mill drinking joint. Co-founders Xu and Fan have amassed a following and when they aren’t heading things up in the glam, low-lit space filled with tropical plants, they hand over the reins to collaborations or pop ups hosted by other bartenders from Beijing or further afield. Reservations aren’t taken, and you may have to wait for a seat, but this is one place worth being patient for.
