With celebrity chef Tam Kwok Fung at the helm, this opulent restaurant serves traditional Chinese classics that taste as good as they look. From pigeon legs wrapped in gold foil for easy handling, to nourishing soups that change every two weeks (a nod to the micro-seasons in the lunar calendar), fine dining fans will be impressed by this thoughtfully executed and diverse menu. Seasonal offerings take into account not only the produce available, but also diners’ desires: hotter weather means winter melon soup, which is said to give a cooling effect. Opt for a la carte or prix fixe, as well as dim sum for early birds before 3pm. One dish to note is the wo zha, a forgotten Qing-dynasty-era street snack made from mung beans, revived and elevated in Tam’s kitchen. Also memorable is the breadth of rare Chinese teas, including an aged liubao (black tea) from 1980 and pu’er aged in bamboo.
