The interiors are astonishing, with tables edged by beaded screens and floor-to-ceiling painted glass panels, along with contemporary calligraphy by Shanghai artist Li Lei. Chef Yang Dengquan is behind a menu that’s notable for its nuance, proving there’s far more to Sichuan cuisine than searing spice and numbing heat. Take dishes like his bouillon-poached cabbage, slow-simmered in a complex chicken broth, or the clever twist on carpaccio, made with air-dried mullet. If you're craving something more familiar, the dan dan noodles are superb: springy, hand-pulled noodles with minced pork, laced with chilli oil and sesame.
