Nestling among the tea fields in the hills overlooking Hangzhou lies this 27-acre estate, with its beautiful gardens and simple wooden building dedicated to one man’s vision. Dai Jianjun pioneered the farm-to-table philosophy and a return to simple, slow-cooked country food in China. His ingredients come from his own organic 20-acre plot, as well as from other local farms that he and his team constantly scour – ask your server to see his ledger meticulously filled with lists of ingredients, where they come and the date of delivery. There is no communal dinging space. Instead, eight simply furnished private dining rooms (air conditioned and with their own bathroom) provide the setting for an experience that has all the timing and seriousness of a religious ceremony. Each meal starts with soy milk and is followed by traditional Chinese dishes that allow the strictly seasonal ingredients to speak for themselves. The delicacy of the flavours will linger long in the memory.
