Overseen by Hong Kong's acclaimed tapas spot 22 Ships' head honcho – Madrid-born Antonio Oviedo – this is a fancier sister spot offering fine dining centred around seafood. The space is stripped back with the site's architectural features like arched windows and vaulted bare-brick ceilings thrown into relief by pops of modern design injected by kooky chairs or curved walls to singularly stylish effect. The menu plays with some equally stunning ingredients with potential dishes including sea urchin with escabeche, those famous red carabinero prawns pepped up with sobrasada and even melt-in-the-mouth beef from acclaimed ex-dairy Txuleta cattle, sourced from the Basque Country.
