Resurrected lime, spent coffee amaro, discarded mango-skin spirit, upcycled grapefruit cava. Ingredients at this trailblazing Hong Kong bar are driven by an all-local, sustainability-first ethos. Launched in late 2020 as the city’s first ‘closed-loop cycle’ bar, it’s the brainchild of Agung Prabowo (formerly of one-time Asia’s Best Bar, The Old Man) and Roman Ghale along with their industry partners. A high-tech stark-white research lab segues to the cosy industrial bar – all concrete limewash walls, reclaimed lighting and apothecary bottles lined up like a mixology militia. Split into five core elements across 10 tipples, the seasonal menu combines modern signatures with unique plays on the classics that are as delicious as they are inspired, with an on-site fermentation chamber providing garnishes and more. Our order? The namesake One Penicillin, One Tree changes regularly and currently sees white chocolate whisky, strawberry brine water, coconut kefir and surplus avocado stones from a nearby restaurant combined to quaffable effect, with one tree planted as part of the Borneo reforestation project for every drink.
