Hidden away beneath BaseHall 02, this subterranean cocktail bar makes quite the first impression. Most speakeasies go for a prohibition-era kind of vibe, with flickering candlelight, barstaff in tweed waistcoats, and perhaps a barrel or two. Not this place. One minute you’re in an upscale food hall, pondering noodles or dumplings, the next you’re in a strikingly pared-back, futuristic space – a cross between a sci-fi spacepod and an underground reservoir. You’re going to need a drink, so claim one of the low-lit, leather-clad booths below the floor-to-ceiling arches, or a stool at the bespoke walnut-wood bar, lit by a glowing amber sun. The cocktails are complex and inventive, recreating memories and places: the tang of salt of fruit grown by the sea, or the taste of a childhood cream soda. They’re often built around aged spirits, like the signature Bread + Butter, a moreish milk punch with notes of toasted brioche and brown butter.
