Sushi Hare is notoriously hard to book, due to its enduring status and the fact it has only eight seats. Chef Motoharu Inazuka serves a traditional Edomae-style omakase menu featuring fresh-from-the-market fish and seafood. The sushi rice here is famed due to Inazuka’s painstaking attention to detail, making sure elements such as the temperature and firmness of the rice, plus the vinegar used, complement each individual cut of fish: think vinegar cutting through fatty slices of toro, and firmer grains of rice that work specifically with creamy sea urchin.
