The Golden Peacock

Macau, China

It’s a neon peacock rather than a golden bird that alerts diners to the location of this restaurant within the vast Venetian hotel and casino complex, which remains the standout Indian dining experience in Macau. Things are no less restrained inside, where the double-height interiors are a riot of textures and vibrant lighting. A front-of-house brigade of Indian staff serves cooking from across the subcontinent from Keralan-born chef Justin Paul which is more restrained than the decor. Expect a balanced use of spices (ground in house), elegant presentation and distinct flavours in dishes that favour labour-intensive presentation. The dhal, for instance, takes 12 hours to prepare, while the mushroom in the khumb bajre ka soweta (a North Indian vegetable stew) is made with portobello mushroom cooked sous vide. A lunchtime buffet offers a more casual experience.
