The in-house Chinese of the Ritz-Carlton Macau is every bit as glitzy as that sounds, though for first-time visitors, all eyes are on what’s outside: a jaw-dropping 51st floor view over Galaxy Macau. Deep-blue accents inside pick up on the Ming dynasty porcelain doted around the large room, where smart staff deliver attentive service that goes some way to justifying the sky-high prices. As does the Cantonese cooking, which uses superior ingredients (barbecued Iberico pork, say) in classic recipes while respectfully updating the standards. Braised pork belly with preserved vegetables, for instance, involves dehydrating deep-fried mui choi and adding a dash of sugar. Dim sum topped with edible gold matches the bling of the location, as too a Bordeaux-heavy wine list, though a list of teas brewed tableside should not be missed.
