While Shanghai has largely transformed into a city of glass and steel, some old corners still speak to times gone by. The historic building at 279 Beihai road in central Huangpu is one such example, now home to Lyon-born-and-bred chef Johnny Pham’s Gallic masterpiece. Starting his culinary career working at Michelin-starred L’Auberge de Fond Rose at just 14, he hoovered up plenty of experience before importing his approach to French fine-dining into China. Referencing both his own Asian background and the location of his kitchen, Pham adds regional tweaks to otherwise classically French dishes, incorporating highlights such as hairy crab, toothfish and Vietnamese chocolate into his tasting menu alongside the caviar, truffles and sauces laden with vin jaune. What emerges is a menu always in shift, redefining the boundaries of French cuisine; a dining experience as dynamic as the city it’s based in.
