Chef Juan Manuel Barrientos' heavenly restaurant empire originated with the launch of the first El Cielo in Medellín (now a restaurant and a hotel) before following up with sister sites in Miami, Washington DC (both US outposts have earned a Michelin star) and Bogotá. Famous for its multi-sensory tasting menus, El Cielo Bogotá sits pretty at number 74 in 2022's 50 Best Restaurants in Latin America list, serving elaborate tasting menus that border on the molecular. If you're lucky enough to secure a reservation we'd advise clearing your diary as you'll be bedding in for a 20-course extravaganza (a children's menu is also available) with plates that could include grilled sweet corn cachapa stuffed with 7 Cueros cheese with a veil of guava and cayenne draped across it.
