The team at Balderdash take an almost culinary approach to seasonality, taking the best produce available and really running with it on the menu. For example, during strawberry season they have been known to partner with one of Denmark's best strawberry farms to create drinks like the strawberry and foie gras old fashioned, which blends foie gras distillate, bourbon, strawberries and bitters. This extends to its ice cream selection, too – we're talking milkshakes, floats and unique flavour combinations such as truffle-hazelnut ice cream with banana and smoke, topped with black truffles and bacon salt. When available don't miss the clarified coconut horseradish daiquiri or the ube Manila sour, with gin, purple yam miso, lavender and bergamot. You haven't had cocktails quite like this anywhere else.
