Jatak is what happens when a New Nordic approach to produce and technique is combined with flavours emblematic of Asia. Opened early in 2022, it's found on an unremarkable Nørrebro street, with a facade that gives way to an intimate dining room whose interiors sing a song of cosy minimalism. It's the work of Canadian Jonathan Tam, ex-head chef at city favourite Relae, who cut his teeth in the kitchens of Noma. Here, a single Solar tasting menu – played out in either the dining room or at the kitchen counter – is grounded by hyper-local produce and a vegetable-forward approach, intwined with Tam's Cantonese and Vietnamese heritage. It's a personal, site- and season-specific interpretation of cuisine that is constantly evolving, with highlights that jump from lion's mane mushroom with sweet and sour habanada pepper to Troldgaarden pork char siu with sesame noodles, and cheung fun with Jerusalem artichoke and black truffle.
