Perched on the top floor of Copenhagen's 25hours Hotel Paper Island, Victory is a contemporary riff on the traditional pub, alongside the first-rate drinks of a serious cocktail bar. Comfortable armchairs and a fireplace contribute to the cosy ambience, not to mention the warm hues and gorgeous wooden bar, plus a vantage that means the views are top drawer too. On the surface, the cocktail list reads like a collection of faithful classics, but each is made original by its use of Danish produce taken from local farms and foragers. The bar has its own distillery too, producing gin, vodka and akvavit.
