Los Tiestos

The name Tiestos is taken from the traditional Andean clay pot which was used for centuries for dry-roasting coffee, wheat, beans, barley and corn and in which many dishes on this restaurant's menu are prepared. Standing in Cuenca's historic centre for almost a decade, this is one of the city's best places to explore Ecuador's rich culinary tapestry from seafood soup to pork loin and aubergine in mustard sauce. Founder Juan Carlos Solan's mission is to promote the heritage and produce of the country and this is evident not only in the food but in the restaurant environment. Set inside a bright red colonial-era house, its tiled dining room is surrounded by wooden galleries decorated with ruffles and hats, with brightly-woven placemats on every table lending a warm and convivial feel that's only enhanced by the charming service.
