Founded in 1829, James Bond's champagne of choice owes a lot to Lily Bollinger, the house's indefatigable matriarch who solidified the brand's reputation around the globe during her 30-year leadership. Perhaps the most celebrated element of her tenure was the launch of Bollinger R.D. (Recently Disgorged) in 1961 and prestige cuvée Vieilles Vignes Françaises in 1969, which is made in miniscule amounts from two prized old-vine plots in Aÿ that managed to escape the blight of phylloxera. Dominated by pinot noir and aged in oak, Bollinger's cuvées are known for their power, richness and intensity. To register for cellar tours and tastings you need to become a member of Bollinger's free-to-join 1829 club. The house has bold oenotourism ambitions and is currently developing its Maison Dueil on Rue de la Charte into a 20-bedroom hotel that will include a wellness area and pool. It's also turning Lily Bollinger's iconic house into a hospitality space with a shop, tasting rooms and a dining room overlooking the garden.
