Since its founding in 1829, Champagne Bollinger has always been shaped by great characters, from the irrepressible Lily Bollinger to fiction's greatest super spy, James Bond. The other important character in the story is Pinot Noir, the grape that forms the core of every Bollinger blend. Difficult to master, its finesse, delicate aromatics and ageing potential make the effort worthwhile. This is especially true of its pure Pinot Noir cuvée, Vieilles Vignes Françaises, produced from two tiny plots that escaped phylloxera in the 19th century – one of the rarest of all Champagnes. Visitors are welcome by appointment.
