La Mère Brazier
Lyon, France
Founded as a small 16-seat bouchon by Eugénie Brazier, the trailblazing mother of modern Lyonnaise cuisine, La Mère Brazier is a portal back to 1930s France. Think understated elegance with a series of small, interconnected dining rooms bringing a homely feel, augmented by parquet floors, decorative windows, white linen tablecloths and mouth-watering wafts from the kitchen. It's here that chef Mathieu Viannay – who bought and beautifully restored the restaurant in 2008 – gives classic dishes a modern makeover. The menu changes with the seasons, but look out for the artichoke foie gras starter (on the menu since 1921); fillet of milk-fed veal with anchovies; pigeon lacquered with lemon and green tea; or the legendary lobster stew. There are two tasting menus, one a tribute to Madame Brazier, and a shorter option for lunchtimes. Finish with a strong coffee and a stroll along the riverbank of the Rhône.
