Tucked away on a residential Marseille street, only those in the know bag a seat at Alexandre Mazzia’s AM. And only a lucky two of the 24 covers get to sit at the coveted bar spots overlooking the kitchen. Mazzia grew up in the Democratic Republic of Congo, accounting for the African influences scattered across a menu that focuses on vegetables, fish and seafood ingredients. Dishes such as courgette flowers in a green satay and saffron beurre blanc and crystallised seaweed with bottarga form part of what he calls a ‘cuisine of emotion’.
