Inky vistas of the Mediterranean take centre stage in this crisp white dining room, nestling in an 18th-century Italian estate near Marseille’s harbour. Gérald Passedat’s menus read like an ode to Provence’s maritime culture, with the bouillabaisse menu in particular exploring the ocean at various water depths. Also on offer are classic dishes such as catch of the day stuffed with seasonal vegetables and sea bass on a tomato, fennel and truffle base, a tribute to his grandmother. If visiting at lunch, a table on the terrace is a must.
