Behind a stately façade, the famed crystal-makers’ historic headquarters have moved with the times, with artist-led installations and bold design interventions. The big draw, though, is the first-floor restaurant, headed up by Alain Ducasse. It’s one of the city’s most striking dining rooms: a soaring space lined with sculptural oak shelves, lit by hand-blown crystal droplets. If the decor steers away from old-fashioned grandeur, so do the menus, which offer a lighter, fresher notion of fine dining. That might mean scallops laced with kumquat and horseradish; blue lobster with rose and tapioca; or a tiny, exquisite salad inspired by a Provençal garden. Prices reflect the quality, so consider a lunchtime visit, when the prix fixe menu comes in at €90 for three courses. Head sommelier Fabrice Langlois oversees a compelling wine list, while 20 or so wines are served by the glass (Baccarat crystal, of course).
