There are no tasting menus or wine flights at L'Ambroisie, only generous portions and a sensible number of courses. Chef-owner Bernard Pacaud who founded L'Ambroisie in 1981 with his wife Danièle has handed over the reins to Shintaro Awa, who was born in Japan to a family of restaurateurs before moving to France at the age of 18. Though preserving the restaurant's culinary legacy and remaining grounded in classic haute cuisine, Awa is forging his own path with contemporary creations that bridge the two cultures. Alongside the feuillantine of langoustine with sesame and curry sauce, and the hot-cold egg with watercress, green asparagus and caviar, are traditional French dishes such as frogs' legs, snails, lobster, sweetbreads and pigeon (which appears with almond royal icing and 'devil' sauce). The thin cocoa tart with Bourbon vanilla ice cream is a signature. The dining room, with its high ceilings, walls draped in Aubusson tapestries and sparkling crystal lights, is a fitting environment for this love letter to classical French dining.
