Jean-François Piège's restaurant empire is impressive; and Le Grand, which he opened in 2015 in the heart of Paris' Golden Triangle, is the showpiece. The interiors are a testament to the avant-garde nature of his cooking: guests enter through the open kitchen of black-and-white marble (as if stepping into the cook's home) before moving into the dining room with its tessellated ceiling of black-and-white glass, which bathes diners in light, and geometric monochrome carpet. The overall effect is as striking as the menu to come. Here he blends precise French cooking with his innovative, sometimes cheeky, flair. Whether you go a la carte or opt for the tasting menu, where each course takes you on a journey to a different corner of France (from Provence to Normandy to Île-de-France), expect exquisite presentation and a serious depth and breadth of flavour, especially in the 'modern stews' for which Piège is so well-known. And watch out for the classic île flottante (a floating island dessert of meringue on crème anglaise), which is served inside-out.
