This shady oasis showcases the ‘new Georgian’ cuisine pioneered by Tekuna Gachechiladze, who fuses traditional flavours with contemporary international influences. Elarji (white grits and cheese) is reimagined as gooey sulguni cheese croquettes with almond sauce and beef tartare served spiked with adjika (coriander-chili paste) and pickled bladderwort buds.
