The result is a fanciful seven-course tasting menu served from 6pm and a five-course option from 10pm, which is perfect for night owls looking for an alternative to the city’s music scene. Frank avoids refined sugar and dairy, instead focusing on foods with natural sweetness like corn, beetroot and carrots, balancing them expertly with umami, salty, sour and bitter notes. The resulting dishes are both beautiful and unusual, an excellent foil to a flight of mini cocktails or a wine cellar that focuses on German pours.
