Sri Lankan-born bartender Indika Silva's Cologne cocktail bar is named after the daredevil toddy tappers of his home country, who climb up and down the tallest palm trees, extracting their nectar for use in arrack. It's no surprise then, that arrack makes an appearance on the menu in a number of drinks, like the Heritance, which mixes it with passion fruit, coconut, tamarind and lime, and the best-selling Ceylon Mule, which blends arrack with palm sugar syrup, yuzu jam, lime juice and tops with ginger beer. The venue is utterly gorgeous too, with its highly-polished wooden bar and gleaming brass pendant lights, which doesn't hurt.
